Can you create a double colour exposure in a photo by holding gels in front of the lens and switching them out during a long exposure?

Is it possible to create a two colour exposure by holding gels or cellophane in front of the lens?Say you were to have a 5 second exposure, could you hold a pink gel in front for 2.5 seconds, have the subject move slightly, switch to a blue gel while they move and then hold the blue for the remaining 2.5 seconds of exposure?
